Rawa Dosa
Pilau is beautifully fragrant rice or a combination of rice and meat, poultry, fish or vegetables. It is always cooked in pure butter, fat ghee, but unsalted butter is also a good substitute.
Ingredients:
Rice flour - 2 cups (Plain)
Fine semolina (rawa) - 3/4 cup
Maida - 1/4 cup
salt - 2 tsps
Finely cut onions - 1/4 cup
Chopped green chillies - 1 tblsp
Cumin seeds - 1/2 tsp
Cut coriander leaves - 1 tblsp
Sour curd - 2 tblsp (optional)
Finely chopped ginger - 1 tsp (optional)
Oil - enough for frying
Coarsely crushed pepper - 1 tsp (optional)
Method:
Mix rice flour, maida and semolina together. Add salt, curd, cut onions, chopped chillies, cumin seeds, chopped coriander leaves, enough water to the mixed flour and make a thick batter. Take care to see that no lumps form while making the batter. Keep aside for 1 or 2 hours. Dilute the dough by adding more water and mix other ingredients. Place a heavy tawa on fire. Pour a ladleful of batter in circular motion and fill the centre with batter. Add a teaspoon of oil around. Fry till golden brown. Turn over and fry for another minute. Serve hot.
